Whole Grain Spaghetti with Garlicky Kale and Tomatoes

This delicious, nutritious and quick dinner recipe is perfect if you want to whip up something impressive without slaving over a stove for hours.

6 oz whole grain spaghetti
2 tablespoons olive oil
1 medium red onion, thinly sliced
2 cloves garlic, chopped
kosher salt
black pepper
1 bunch kale, thick stems removed and leaves torn
2 pints grape tomatoes, halved
1/3 cup chopped roasted almonds
1/4 cup grated pecorino

Cook the pasta, then reserve 1/4 cup cooking water. Strain the rest. Heat the oil in large skillet over medium high heat. Add the onion, garlic, a 1/4 tsp salt. Cook, stirring occasionally, 4-5 minutes. Add kale, cook, toss frequently. Add tomatoes and cook another 2 minutes.
